65Versatile and Tasty Corn and Yeast Free Bread
If you have a yeast or corn allergy, finding corn and yeast free bread is often expensive or just plain impossible. Most of the packaged bread at the store has corn syrup, corn derived dough conditioners, yeast or is baked on corn meal. Some health food stores have corn free or yeast free bread, but at $5 a loaf, many simply can't afford it. I have never found a corn and yeast free bread at the market that I have liked. Since I am allergic to yeast and corn, I have come up with this corn free yeast free bread recipe that my kids will even eat. It is versatile and tasty and can be used in place of sliced bread, tortillas or pita bread.
Corn and Yeast Free Dough Mix
Mix the ingredients below well with your hands, add a little flour if sticky and cover. Wait 20 minutes.
2 cups of organic flour (some regular flour and organic have corn derivitives mixed in so check the label)
2 Tb oil (canola or sunflower works well)
3/4 warm milk
1/2 tsp sea salt
1/2 tsp baking soda
1/2 tsp cream of tartar
Split Dough Into Small Balls Then Roll Out
Split the corn and yeast free dough into 8 equal parts and roll them into small balls. Let them rest covered for 10 more minutes.
Roll out one dough ball at a time on a floured surface into a flat tortilla shape, you can make them round or elongated, however you choose.
As one bread is cooking, you can roll out the next and get a rythym going.
Cook Dough in Cast Iron Pan
For best results, cook bread on medium heat in a cast iron pan, no oil added - bread already has oil in it.
Set the dough carefully in the pan and turn it over just a bit after some bubbles appear.
The other side cooks faster so keep an eye on it.
If bread starts to burn, take the pan off the burner for a bit and adjust your temperature.
Turn Your Bread Over and Enjoy
Don't burn the bread, the second side cooks faster.
Cooking this bread takes a little practice but it's easy once you get a rythym going.
Cool bread on a wire rack and store in a container in the refrigerator.
I have doubled the recipe and frozen half of it before. It still tastes great and thaws easily.
For tortilla like bread, roll out more or make slightly smaller dough balls, they roll out easier.
This bread can work for nearly anything, most importantly, it's corn and yeast free and actually tastes great!
